I tried Audacity and it frankly sucks. Ardour super complicated, Jokosher is always crashing and seems to have been abandonned.

 

Does anyone have an idea of what I could use?

Have you tried Rosegarden? Ultimately, OSX is the best choice for audio right now (Leopard isn't fully supported yet.) You've probably already seen this, but if not, maybe it will help: http://www.soundonsound.com/sos/feb03/arti.../linuxaudio.asp
